Nigerian Egusi Soup
π§ Ingredients:
Ground egusi (melon seeds)
Palm oil
Meat (beef, tripe, etc.)
Stockfish/
dried fish (optional)
Crayfish (ground)
Seasoning cubes,
salt
pepper
Onions
Leafy veg (ugu, spinach, or bitterleaf)
Water or meat stock
π©βπ³ Steps:
Boil meat with onions, salt, and seasoning. Add stockfish if using.
Mix egusi with water into a thick paste.
Heat palm oil, scoop in egusi paste, fry until slightly dry.
Add meat stock, stir and cook until thick.
Add crayfish, pepper, and seasoning. Simmer.
Add meat and fish, cook together for a few minutes.
Add chopped vegetables, stir and cook briefly.
Taste and adjust seasoning.
β Serve with :
Pounded yam, eba, fufu, or semovita.

π² Nigerian Okro Soup (Quick Recipe)
π§ Ingredients:
Fresh okro (sliced or grated)
Palm oil
Meat (beef, tripe, etc.)
Stockfish
Dried fish (optional)
Crayfish (ground)
Pepper (blended or ground)
Seasoning cubes
Salt
Onions (optional)
Leafy vegetable (ugu or spinach)
Water or meat stock
π©βπ³ Steps:
Boil meat (and fish) with salt and seasoning until soft. Keep the stock.
Heat palm oil, add pepper and crayfish, stir-fry briefly.
Add meat and stock, let it boil.
Add okro, stir well and let it simmer (donβt overcook).
Add chopped vegetables, cook for 1β2 minutes.
Taste and adjust seasoning.
β Serve with:
Eba, fufu, semovita, or amala.

π Nigerian Nkwobi (Cow Foot Delicacy)
π§ Ingredients:
Cow foot (cut into pieces)
Palm oil
Potash (kaun / akanwu) β dissolved in warm water
Utazi leaves (sliced)
Ground crayfish
Pepper (blended or ground)
Seasoning cubes
Salt
Onion (for boiling meat)
π©βπ³ Steps:
Boil cow foot with onions, salt, and seasoning until very soft.
Mix palm oil with potash water in a bowl β stir until it thickens into a yellow paste.
Add crayfish, pepper, and seasoning to the oil mix. Stir well.
Add the soft cow foot and mix until well coated.
Garnish with utazi leaves.
β Serve:
Best enjoyed warm in a traditional bowl β with a cold drink, no swallow needed.
